Roots and Mushrooms

compressed_letterbox_Beetroot-_26-potato-boulangere-2_2MBSainsbury’s have a lovely selection of recipes on their site which reinvent the humble vegetable accompaniment to Christmas dinner but shouldn’t be saved for just one day. Take the gorgeous, rich Beetroot and Potato Boulangere above heat it up with a touch of chilli and make it a dish all on its own for vegan, gluten free or simply vegetable deliciousness.

mushroomsIts bolets time here in Catalunya, or mushrooms to you and I, we even have festivals, I may have mentioned this before.  Another way to bring the forest in is with this Mushrooms, Shallots and Sherry dish serve as an accompaniment or as a mains with crusty seeded bread. crumble

Add nuts to your veg for a crunchy crumble topping, I would be tempted to add nuts to an actual crumble mix if I was serving as a dish in its own right.carrot

For the finale and a sweet touch Roasted Garlic and Clementine Carrots and nary a sprout in sight! Actually there are a couple of sprout ideas in the 16 Simple Side Dishes article from Sainsbury’s, complete with links to recipes for every one. Personally, I love sprouts and preferably unadulterated although I have been known to toss them with fried pancetta and whole peeled chestnuts for a posh touch. See roots and shrooms aren’t just for Christmas.
